How to make: chocolate and peanut butter oat balls

Ingredients

50g oats
15g desiccated coconut
2 tbsp golden syrup (plus a little extra if required)
45g smooth peanut butter
15g dark chocolate chips/chopped chocolate

Makes approx. 8-10 oat balls.

Method

1) In a large mixing bowl, mix together the oats, desiccated coconut and chocolate chips.
2) Add the golden syrup and peanut butter and mix thoroughly with a metal spoon until well combined.
3) Now it’s time for the messy bit! Get approximately a dessert spoon’s worth of mixture and place it into the palm of your hand. Give it a good old squeeze to get the ingredients starting to really stick together and then work it into a ball shape – squeezing/pitching as you go to encourage it to take form. The key thing here is not to be too gentle… you want your balls to be nice and er… firm (*ahem*) otherwise you’ll end up with a crumbly, oaty mess in your bento box once you’re out on the road.
4) Repeat the squeeze-and-roll manoeuvre until you’ve used up all the mixture. You might need to add a little extra golden syrup as you go if the mixture get a touch dry and starts to misbehave.
5) Place your oat balls in the fridge (ideally for a couple of hours but for at least 30 minutes) to firm up – this stage is key as it’ll stop them from falling apart when you’re trying to grab them on the move.
6) Pack them in your bento box/top tube bag (or pop them in a sandwich bag if you’re storing them in your jersey pocket) and get ready for a deliciously well-fuelled adventure!

Store any un-scoffed oat balls in a sealed container in the fridge and they’ll be good for about a week or so.
